Foodie Friday: Blueberry Buckle

On the 4th of July, we went to my aunt and uncle’s house for the holiday. We had a great time – and during that time, I was able to pick blueberries from my aunt’s blueberry bush(es). THEN a few weeks later, we bought a 20 lb. bag of blueberries to freeze and use all winter long.

Good thing we love blueberries.

So when we were trying to find something to make for our family picnic last week, we decided that it HAD to be something made with blueberries.

We decided on blueberry buckle.

Ingredients for Cake:

  • 1/4 cup butter
  • 3/4 cup white sugar
  • 1 egg
  • 1/2 cup milk
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons salt
  • 2 cups blueberries

Ingredients for Crumbs:

  • 1/4 cup butter
  • 1/2 cup white sugar
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup all purpose flour

Directions:

  1. Preheat oven to 375 degrees. Grease 9×13 pan. 
  2. In large bowl cream together 1/4 cup butter and 3/4 cup sugar. Beat in egg and milk.
  3. Combine 2 cups flour, baking powder and salt, and stir into butter mixture. Fold in blueberries and spread in the bottom of your pan.
  4. In a small bowl, combine 1/4 cup butter, 1/2 cup sugar, cinnamon, and 1/3 cup flour. Mix together until mixture resembles course crumbs, then sprinkle over blueberry mixture.
  5. Bake 40-55 minutes, or until golden brown. (It took ours about 50 minutes to bake).

This was a big hit at our family get together! Everyone seemed to enjoy it!
